*Ingredients:*

- 500g carrots, peeled and grated
- 1 cup milk
- 1/2 cup sugar (adjust to taste)
- 2 tablespoons ghee (clarified butter)
- 1/2 teaspoon cardamom powder
- 10-12 almonds, chopped
- 10-12 cashews, chopped
- A few strands of saffron (optional)

- 1 cup milk
- 1/2 teaspoon vinegar or lemon juice

*Instructions:*

1. *Prepare Sweet Curdled Milk:* In a separate pan, bring 1 cup of milk to a boil. Once boiling, add just 1/2 teaspoon of vinegar or lemon juice and stir. The milk will curdle gently while retaining its sweetness. Turn off the heat and strain the sweet curdled milk through a muslin cloth. You'll be left with soft paneer-like curdled milk with a delightful sweetness. Set it aside.

*Making the Carrot Halwa:*

2. *Grate the Carrots:* Begin by peeling and grating the carrots. This will yield about 500g of grated carrots.

3. *Cooking Carrots:* In a heavy-bottomed pan, add the grated carrots and 1 cup of milk. Cook them together over medium heat. Stir occasionally to prevent sticking.

4. *Adding Sugar:* As the milk starts to reduce and the carrots soften, add 1/2 cup of sugar. Adjust the amount based on your sweetness preference.

5. *Cooking and Ghee:* Continue cooking and stirring. The carrots will absorb the milk and sugar, and the mixture will start to thicken. Add 2 tablespoons of ghee, cardamom powder, and saffron strands (if using). Stir well.

6. *Nuts and Raisins:* In a separate small pan, roast the chopped almonds and cashews in a little ghee until they're golden. Add them to the carrot mixture and stir.

7. *Sweet Curdled Milk Surprise:* Once the carrot mixture reaches a halwa-like consistency, spread half of it evenly in the serving dish. Layer the sweet curdled milk (paneer-like) on top.

8. *Top with Remaining Carrot Mixture:* Cover the sweet curdled milk layer with the remaining carrot halwa.

9. *Garnish:* Garnish with more chopped nuts or some saffron strands if you like.

10. *Serve:* Allow the dessert to cool slightly, and it's ready to be enjoyed.
