Delicious Mutton Biryani Recipe

Indulge in the rich and aromatic flavors of Mutton Biryani with this step-by-step recipe. From marinating the meat to layering with fragrant rice, we've got you covered.

*Ingredients:*

*For Marinating the Mutton:*
- 500g mutton, cleaned and cut into pieces
- 1 cup plain yogurt
- 1 tablespoon ginger-garlic paste
- 1 teaspoon red chili powder
- 1/2 teaspoon turmeric powder
- Salt to taste

*For the Rice:*
- 2 cups long-grain Basmati rice
- 4 cups water
- Salt to taste
- 2-3 green cardamom pods
- 2-3 cloves
- 1-inch cinnamon stick

*For the Biryani:*
- 3 tablespoons vegetable oil
- 2 large onions, thinly sliced
- 2 tomatoes, chopped
- 1/2 cup chopped coriander leaves
- 1/2 cup chopped mint leaves
- 1/4 cup warm milk
- A pinch of saffron strands

*Instructions:*

*Marinating the Mutton:*

1. In a bowl, combine the mutton pieces, plain yogurt, ginger-garlic paste, red chili powder, turmeric powder, and salt. Mix well. Marinate for at least 1 hour.

*Preparing the Rice:*

2. Wash the Basmati rice and soak it for 30 minutes. Drain.

3. In a large pot, bring 4 cups of water to a boil. Add the soaked and drained rice, salt, green cardamom pods, cloves, and cinnamon stick. Cook the rice until it's 70% cooked. Drain and set aside.

*Making the Biryani:*

4. Heat vegetable oil in a large heavy-bottomed pan. Add the sliced onions and fry until they turn golden brown. Remove half of the fried onions and set them aside for garnish.

5. Add the marinated mutton to the pan and cook until it changes color. Add chopped tomatoes and cook until they become soft.

6. Add chopped coriander leaves and mint leaves. Mix well.

7. Layer the partially cooked rice on top of the mutton mixture.

8. Sprinkle the saffron strands over the rice. Pour warm milk over it.

9. Cover the pan with a tight-fitting lid and cook on low heat for 20-25 minutes.
